As promised, today I’m serving up a hostess’ dream recipe, the kind of thing you can throw together when you have surprise guests, or don’t have time to do a proper shop before dinner. It’s a briny, garlicky clam toast, and it tastes as good as if you had caught the clams same day. Of course, tinned fish is now firmly in the zeitgeist, so it’s easy to find quality tinned clams at the grocery store, though you probably aren’t sure what to do with them. The basic white wine sauce we are making for the toast can also be applied to spaghetti alla vongole, with a splash of starchy pasta water to bring it all together. Personally, I like how the sourdough absorbs the precious sauce, so toast is my vehicle of choice.
